Reducing Heat Loss

One advantage of polycarbonate pans is there insulation qualities compared to metal pots and pans.   However because of the large surface area of these rectangular pans there still can be a significant amount of energy lost via heat dissipation, especially through the sides and bottom of the pan.


The data below shows one example of how heat loss can be reduced by using a terry cloth wrap and cover.  The water bath temperature for this test was 175 F and a full-size pan filled with 5 gal. was used.  To measure KWH a "Kill-A-Watt" energy monitor was used.


In this test the wrap and cover significantly reduced heat loss, with the "wrap" alone reduced energy loss by over 60%.


More tests are planned at different conditions and with different wrap materials.
