We're very excited to be introducing our exclusive new "Pro-Line" commercial-grade accessories  for circulator sous vide.   


The Pro-Lines have a NEW hinged lid keeps heat and vapor inside and provides easy opening while preventing hot water from dropping from the lid when it's opened.


The second energy saving feature is a metalized two-layer bubble insulation that reduces heat loss significantly and makes your circulator's output more efficient (see sidebar for details).

Save Energy and     Money

We have recently completed heat retention efficiency tests of our pans with and without the custom-notched lid and pan insulation. The bottom line is that even though polycarbo-nate insulates better than metal heat loss can be significant with an “open” pan, especially at high water bath temperatures. As the chart and table show this heat loss can be reduced by two to four-fold by adding a customized lid with a circulator cut-out.  Adding our reflective twin-bubble insulation can reduce losses by another factor of two. 


For a given pan size heat loss and energy savings are dependent on water bath temperature, cook time, whether there is a covering feature (lid, saran, floating balls) and if insulation is used.  The chart and table demonstrate heat / energy loss differences by assuming a hypothetical cook temperature of 150 deg. F and a long (2-day) cook time that would be appropriate for a chuck roast or pork shoulder.

For the occasional SV cook these saving may not be all that significant.  But for the commercial application and heavy consumer usage this savings can pay for the lid and insulation quickly.  More importantly to many SV chefs is the effeciency increase you get.  In other words if you have a 800W circulator you bought for $150, if you add insulation you now have the equivalent of a 1500W circulator that would cost twice as much.  Not a bad return for a $20 investment :)
